Overcooking or over grilling an expensive piece of meat and ruining it. Used mainly among the grilling and barbecuing community. When you "Kodiak" a piece of meat on the grill, it is black and dry; nearly inedible. This can be caused by not paying attention to the grill, or by being inexperienced on a particular grill or with a particular cut of meat.
George: "I'm going to smoke some beef ribs on my new smoker before I try and smoke a brisket on it."
Adolf: "Good idea. You don't want to 'Kodiak' an expensive cut of meat like a brisket."
