Similar to your mom jokes, but making fun of how hipsters reject anything as soon as it becomes popular with the masses, or better said, mainstream.
Basically you call one thing mainstream and go on to praise another thing for some kind of (retarded or otherwise) reason.
Examples of ...is so mainstream jokes:
Lady Antebellum is so mainstream, I prefer Wilco because Seth Rogen mentioned them in Funny People.
Pokémon is so mainstream, I prefer Monster Rancher because it never got its well-deserved limelight.
Francis Ford Coppola is so mainstream, I prefer Stanley Kubrick because his films make you think with your brain instead of just see with your eyes.
Sea otters are so mainstream, I prefer river otters because they don't pollute the ocean with their trash and feces.

Bands popular amongst only indie kids, but break out into the MTV crowd. Includes almost all bands that start with "The". They're not indie anymore, but you don't know what else to peg them as.
Hipster 1: I cannot stand this wave of mainstream indie, those bands were soo much better before they sold out and got big.
Hipster 2: Ugggh, I know, those bands are just so uncool now.

A person, usually among the young demographic, who consistently wears plaid shirts and skinny jeans. They go for the 'hipster look', however, they generally still listen to mainstream pop and hip-hop, which defeats the purpose of their efforts. (They may also listen to 'alternative' like Mumford and Sons or Death Cab for Cutie's new album). Mainstream Hipsters will generally group together to form their own clique of MHs, however, they can be spotted among other social groups occasionally.
Mainstream Hipster 1: "Omg, did you know that Ben Gibbard used to have this band called The Postal Service? Omg, that was like, so long ago."
MH 2: "No way! That's soo cool. Death Cab for Cutie is like, my FAVORITE. They're sooo hipster."
MH 1: "omg I know."
