Time saving BBQ technique where meat such as pork shoulder or brisket is cooked in a smoker, followed by time in a crockpot or pressure cooker. Similar to the Texas crutch but with a crock pot rather than a tinfoil wrap.
Today we used the Minnesota crutch on a smoked pork shoulder so we have more time to chop and brew.
