Lavangi

Lavangi is baked chicken and fish, stuffed with walnuts and cherry-plum and usually served with boiled rice, seasoned with melted butter. You’ll find this Azeri dish in southern Azerbaijan, especially in Lankaran, Masalli, Salyan and Neftchala districts, but you can also taste it in Baku. There are two types of lavangi. Toyuq lavangi (stuffed chicken) and baliq lavangi (stuffed fish) are treasured dishes of Azerbaijani cuisine. For stuffed chicken lavangi pilaf, the stuffing is prepared by making a puree with onions, which is squeezed into a cloth, to remove the liquid, and mixed with crushed walnuts and prune puree (probably of the sour plum type). The stuffed fish version is usually prepared for Novruz. The preferred fish is the Caspian kutum, or carp of the Caspian Sea, but white-fish beluga (sturgeon) is also suitable. The other condiments for the filling are sour prune, sour cherry or a pomegranate juice syrup called “narsharab" ("nar" is the local name for pomegranate in Azerbaijan). These condiments are added to the mixture with crushed walnuts and chopped onions; if the fish has caviar, these are also used in the filling. After the fish is roasted, it’s served with pieces of lemon, bread and narsharab.

City of Winds

Baku, the capital of Azerbaijan that lies on the banks of the Caspian Sea, is also called the City of Winds.

The City of Winds (Azerbaijani: Küləklər şəhəri) is an unofficial, literary name for Baku, mainly because it is windy throughout most of the year. The name derives from the ancient Persian name of this locality: بادکوبه (Bādkube, lit. "pounding winds"). There are two winds common to Baku: cold and rough Khazri, and mild and gentle Gilavar. The former is associated with negativeness, while the latter is associated with goodness, forming an important chain in Azerbaijani mythology and beliefs that is related to the struggle of Good and Evil.

Talysh

Talysh (also Talishi, Taleshi or Talyshi) are an Iranian ethnic group indigenous to a region shared between Azerbaijan and Iran which spans the South Caucasus and the southwestern shore of the Caspian Sea. They speak the Talysh language, one of the Northwestern Iranian languages.

It is spoken in the northern regions of the Iranian provinces of Gilan and Ardabil and the southern parts of the Republic of Azerbaijan. Northern Talysh (the part in the Republic of Azerbaijan) was historically known as Talish-i Gushtasbi. In Iran there is a Talesh County in Gilan Province.

Talysh Khanate (Persian: خانات تالش , romanized: Khānāt-e Tālesh, Azerbaijani: Talış xanlığı, Talysh: Tolışi xanəti) was a khanate of Iranian origin that was established in Persia and existed from the middle of the 18th century till the beginning of the 19th century, located in the south-west coast of the Caspian Sea.

It comprised the southeastern part of the modern day Republic of Azerbaijan and the eastern tip of north-western Iran. The capital of the khanate was its chief city, Lenkaran. Its population mainly consisted of Azerbaijanis and Talysh people.

Lankaran

Lankaran is one of the top summer holiday destinations in Azerbaijan.
Lankaran is undoubtedly beautiful and located in the south-east of Azerbaijan – on the Lankaran Lowland stretching tens of kilometers. A beach destination that sits with a stunning rugged mountain as its backdrop, you will find yourself between two worlds.

Lankaran

Lankaran is one of the oldest settlements in Azerbaijan. Facts confirmed by archeologists state that the area was inhabited from the Bronze Age. Because of the linkages between the East and the West such as the silk route, Lankaran continued to grow as a major stopover point for caravan routes. In 1742, the Talish Khanate ( Talysh Talesh )moved its capital to Lankaran. From antiquity, people throughout Lankaran have been involved in animal husbandry, horticulture, aquaculture, and sericulture. Trades such as blacksmithing, coppersmithing, pottery, and weaving are key cultural traditions throughout Lankaran. Blacksmith, copper-smith, pottery and other trades were widely spread in Lankaran. Since the Khanate established its capitol in Lankaran, there was a great surge in trade relations between Iran, Turkey, Russia, China, India, Pakistan, and Central Asia. With the signing of the "Gulustan Treaty" in 1829 between Russia and Persia, Northern Azerbaijan was occupied by Russia. With the Russian occupation, people took the lead in the development of several new industries in Lankaran such as viniculture, ceramics, and brick making, and aided in creating trade ties between Lankaran and Russia. Through this exchange, Lankran strengthened its cultural roots, and its scientific, educational, health, and industrial bases.
