Chiapas Mexico

Chiapas Mexico - Chiapas is the southern most state in Mexico, it borders the Mexican states of Oaxaca to the west, Veracruz to the northwest, and Tabasco to the north, & the Country of Guatemala to the east and southeast.

Technically the Country of Belize but

You'd have to cross through Guatemala

Chiapas has a significant coastline on the Pacific Ocean to the southwest.

Chiapas is home to the ancient Mayan ruins of Palenque, Yaxchilán, Bonampak, Chinkultic & Toniná. It is also home to one of the largest indigenous populations in the country, with ten federally recognized ethnicities.

Chiapas is known for the instrument Called the marimba.

Chiapas ranks 2nd among the Mexican states in the production of cacao, the product used to make chocolate, and is responsible for 60 % of Mexico's total coffee output. Other significant crops are sugar cane, squash,corn,beans,bananas & other fruits.

In layman's terms Chiapas is just southern Mexico.

its capital and largest city is Tuxtla Gutiérrez.

Local specialties here include ningüijute, a seed-based pork mole, chispola, a beef and vegetable stew and pictes, a sweet corn tamale.

Carne cocida en limón is a traditional Mexican dish originating from Chiapas. Often served in cantinas and pulquerias, this tasty snack consists of ground meat marinated in lime juice. It's usually prepared with a combination of fresh lime juice, ground beef (often sirloin), chopped tomatoes, chopped white onions, serrano chili peppers, and salt.

The lime juice is mixed into the ground meat, then placed in the fridge to marinated for at least four hours. The rest of the ingredients are then added, and the meat mixture is refrigerated for 2 more hours. Once done, carne cocida en limón is typically served with fried or toasted tortillas.
